Let's face it. iPhones are made in China; China is the bootleg capital of the World.

Maybe Apple don't do the copying directly, maybe they leave it up to the Chinese to reverse engineer the best of the rest, then hope to apply diplomatic immunity. Must save a fortune in R&D.

It is about the idea. You don't have to steal someones implementation to infringe on one's patent portfolio.

Both Nokia and Apple have separate implementations.

Wrong. Patents are about the specific implementation to achieve the purpose. If you somehow use that implementation no matter to what purpose, you are in a danger of infringing.
