In the standard file manager (and the other one) you can only select one file at a time or *all* files, but not just two or three ...
How can I do this?

Point your stylus at an entry that is _not_ currently highlighted, then carefully drag it over to the entry that _is_ highlighted. Voila, multiple selections marked.

So when I select ten files I have to repeat this 9 times ?

Standard windows:
shift click
and
ctrl click works on my N810.

No, you can just drag it over all of the files. But they do have to be next to each other for that to work with the touchscreen. You can't really do gaps in the selected files, unless you have an n810 / bluetooth keyboard and use gemniii's method
