Those applications are so small, I don't know if there's any point in uninstalling them?
Couldn't you just add your replacement apps and ignore the built-in apps?

I have been looking around and haven't seen any way to uninstall the default apps, for example the contact manager software or email. I would replace the apps with others of my choice instead. Any ideas or thoughts on this?
