is it not possible to change the server settings on the client and use a own server with e.g. openfire?

@cvp: Telegram is not XMPP compliant as far as I understand, so forget about OpenFire. And their server is not open source, so you can't run your own. Another centralized service in the age of mass surveillance doesn't sound like something to be excited about at all.
People can use XMPP instead of all these broken attempts to reinvent the wheel. I guess some people never learn.

Also, how can we trust anything they say about their servers if they aren't open? Even assuming their security is not broken, an IM protocol which doesn't allow federation is a failure from the start, nothing even to consider.

To sum it up: avoid at all costs. There are no new ideas, and they add their flawed homegrown mix of RSA, AES-IGE, plain SHA1 integrity verification, MAC-Then-Encrypt, and a custom KDF. Instead of Telegram, you should use well known and audited protocols, like OTR (usable in IRC, Jabber) or the Axolotl key ratcheting of TextSecure.

@coderus: It's not about being paranoid. It's about damaging others and being irresponsible doing it by proliferating a bad service. I.e. you using it doesn't affect just you. It affects others - negatively.
