Only had my N900 for a week, and these are the best apps etc I have got so far.. Some of these just sit n the background, but they all add value etc to the N900, which I love

Media applications
Extra codecs - Allows the Media player to play much more
Ogg support - allows the media player to play ogg files
RDSnotify - widget to control fm transmitter, and to display useful info on your radio
Now playing notifier - system message showing track and artist.
Gpodder - the best (only?) podcast app for Maemo
Last.FM notifier - scrobbles your music to last.fm
Utilities
Batterygraph - essential to gauge how quickly you are using your battery
camkeyd - uses the camera button as a hardware task switcher (useful for us with diablo written through us like rock!)
cpumem applet - cpu/memory usage in the status bar, handy to see what's happening.
simple brightness applet - control the screen brightness from the statusarea
rootsh = enables root acces for xterm
ssh client and server -allows you to ssh to other linux boxes and back to the N900
Openntpd - keeps your N900's time in sync
unzip addon for the file manager
Flashlight - allows you to use the led flash as a torch

Comms
MSN (pecan) - MSN im protocols
pidgin protocols & pidgin extra protocols
Hermes - good for harvesting details from twitter/FB for your contacts
Personal Dataplan monitor - track cellular data usage

General Apps
Ecoach - nice sports tracking app - I upload to Endomondo, cos it's better than Heia Heia at this time
fbreader - classic maemo ebook reader
omweather - desktop weather widget. classic from maemo4
osmtogo - Openstreetmap editor
presencevnc - vnc client. this one scales the screen, so I can see my 1920 res (1080p) mythtv screen on my N900 Brill!
Qtrecco - lirc frontend
Pixelpipe mediauploader - great for posting media to facebook/twitter etc

For photography FCamera and HDR Assistant are must-haves. When traveling I also love to have a full copy of Wikipedia via evopedia.

Which is the point of keeping an eternal post as the reference post? 11 pages of comments :O, now we have the opportunity to create a new condensed post, don't we?

In my case, I think I don't have any special app downloaded. The best the n900 can do is to surf internet, and microB is still the best option (firefox even with overclocked n900 is too slow).

I would love any audio player that could display lyric from mp3/flac files, a pitty it doesn't exist. And last time I tried FCam, it was not compatible with overclockable-kernel
