I'd like to set up notifications so that they emanate from one email account only (currently there are three set up on the device). Is this possible?

I don't think this is possible...
However, you may want to look at MeMailSettings by Segey_Kashin and see if it has some setting that could be tweaked to allow you to do so...

one workaround is to create a filter on the server to make mails from the accounts you don't want to be notified from, to skip the inbox. Downside is that you break notifications for these accounts everywhere.
