Well, browsing through the world of high-end microphones is kind of eye-opening. For the first thing, there doesn't seem to be any sort of stereo bluetooth microphone.
Most of the portable stereo microphones I can find (

) are tied to special devices designed for stereo audio input (like personal audio recorders or camcorders).
I've found a few stereo microphones for the iPhone (
example
), but they all connect directly to the data port on the phone (as the mic input for the iPhone is also mono-only).
And it seems the high-end stereo microphones are either tied to USB or to more esoteric recording studio equipment...
I'm beginning to suspect that acquiring stereo input is a bit more complicated than I had thought.
