You will need to script something changing the gconf value for the/all connections and put it as icon on home screen. But I use my WiFi as automatically (at home always online) and my GPRS connection as manual. Whenever I am abroad and some app (mail/browser requests online demand, triggered by me) a popup appears to choose the possible internet connection.
