The HildonApplicationManager is crippled by default to not show all the applications, that are installed.
FasterApplicationManager gives you far more control, what to install and what to remove.

BUT as sifo already pointed out, BE CAREFUL!
Even for the N900, we easier and faster shred things, than it might take us to repair the damage.
Filebox is a very nice additional file manager, and it also pulls in rootsh as dependency, which might become handy for fixing things.
